Let me start off with explaining my background in baking. I hate baking at home, enjoyed it as a kid but that was the learning and experimenting in a good laid out kitchen at my childhood home. My mother had my father redo it when we first moved in, she was the country style family cook and needed the room and layout for her normal daily activities. My experience comes from working in the wholesale baking industry thus I never did get accustomed to smaller less ideal spaces.

In the wholesale baking industry we have "Mise en Place" which means "putting in place" or as I always said it meant "keep your shit organized" sometimes implying "pull head from ass, wipe shit from eyes!" 😅 large scale baking is no joke! I started at a grocery store which I thought was small and found out after the fact they were most likely one of the largest producing smaller bakeries around still doing full mix recipes. I learned to move right from the get go, to hustle and time things to perfection. I found that my attention to detail and intense focus from smoking weed was an essential asset so seldom did I show up sober. Key for maximizing efforts is and always will be understanding accepted margin of error!

Weights of ingredients, mixing times, portioning of product, bake times everything has a margin of error.... except one fucking thing that we get swamped with at the busiest possible flipping time of the year surrounded by a million products all needing finest detail work... those days where you can hardly break away for a drink of water never mind sneak away for a Jamaican Coffee and without the focus boost she does dwindle...

GOD DAMN SUGAR COOKIES

A bakers worst nightmare, the sugar cookie among everything else having to be done, even one extra rotation in a deck over is one to many and one too few they will be inedible. Our oven was quick with the 7 decks it had, the thing is 14' X 14' deep and wide while being 18' long, but not quick enough. One rotation to many or stopping to long on another product throwing the rotation timing out would mean they would either be under baked a little or come out completely black. Each time something like this would happen it was essentially the bakers on the spot call to try save them knowing with 30 seconds left on the clock very little could be done!

My solution required the utmost attention so often I would put baking those cookies at the end of the day where nothing else will disrupt my focus, just in case someone messes with my oven ya know that time during the day where I can go sneak off and not worry about 😎. If things don't time right, sometimes oven temp fluctuations will cause issues also, I will try back track the oven 50% of the time I feel the cookies are under baked. Turning the oven backwards to then allows for browning to occur the only issue is by doing this you choose to sacrifice the last shelf as it is always quicker to load then to take out and a quick load means less variance in baking.... and more time outside 💨

AHG just thinking of the holiday season makes me cringe! I am so glad that career is behind me and I can laugh while...

That’s man I’ll need it 😅 not gonna try quitting the weed with all this stressful chaos going on.... just found out I may get laid off from work 🤦‍♂️ thank god for my backup job SkipTheDishes 😅

Hiyah dookie! once again, let me bring down my contribution for this prompt: "Baked". Bit I promise to post it later though. Here it is:

GETTING BAKED!
Getting baked when you’re baking something is somewhat discouraging but there’s a saying that nothing is perfect in this world. With baking, you need to have the perfect recipe to meet the right measurements in every cup of each ingredient. Actually, I used to bake cakes in different occasions and some of which I drop in coffee shops and food stalls then collect my sales in the afternoon. I also made wedding cakes for special orders. One time, I was so excited with my four-storey wedding cake order. To my dismay, the two layers did not rise accordingly. I kept on thinking what went wrong, to find out later that I forgot to put the baking powder and baking soda. I got baked with my own clumsiness. But then, it was not at all a failure since it was still delicious. I made thin slices of the banana cake and toasted it. It was like an unleavened bread! The kids loved it too. This is one of the complexities when you bake a cake. You need to have presence of mind or else you will be in trouble!
My mother-in-law once had a restaurant in front of the public market. Our market day is every Tuesday, Friday and Sunday. Canlaon City is highly agricultural because of its rich natural resources wherein most people depend on their harvest. Since we had a restaurant, people would flock there including the peddlers. The good thing is everybody knows everybody here and one would readily know if you’re a stranger of this place. It’s a close-knit community. My mother-in-law would buy one whole basket of green bananas and cassava including a basketful of guavas and pineapples. The guavas and pineapples will be for my jellies and jam.
The green bananas and cassava will be peeled at night after the restaurant is closed for the day. The green bananas will be peeled and mashed while the cassavas will be peeled at soaked in a bucketful of water to preserve its freshness before it is grounded manually. Cassava cake preparation is a bit complicated to make but I had no problem with that since I let others do the task. The funny thing is that I let the suitors of my two sisters-in-law do the grinding while they’re busy chatting. They’re both soldiers and they’re too willing to do their task just to have a longer talk with the girls. 
I bake the banana cake in two ways. Some will go to the oven and some will be steamed. I prefer the steamed one for consumption though of course, the baked ones lasts longer. For the cassavas, it needs to be squeezed with a sack cloth first in order to remove the juice before mixing with the needed ingredients. I also use three methods in baking cassavas. It’s either baked, steamed or wrapped and rolled in young banana leaves. After setting all in the oven, I will let our helper watch over it while me and my kids will go to the little movie house to watch some funny movies, for about 30 minutes.
It was a Sunday market day when our family friend passed by to buy to layers of baked banana cakes. He was a bit drunk. He said that it will be a “peace” offering for his wife. The following day, he got a black eye and told me it was my fault though he was sheepish and smiling. I asked him: why? Because when he woke up, he didn’t knew where the cake was and to whom did he gave those cakes. Well, he got baked! He remembered later on that he passed by a little bar and gave the banana cake to the girls. Lol.
Thanking for @dook13 for this 420freewrite with prompt: Baked

Till then,
@Sarimanok

I'd love to do that one of these days. I mean into bread stuffs just for some experiments and home consumption. I'd appreciate it very much if you can give me some of your secret ingredients! In my case, I have some clients who give me some 'additives' to be added on their orders. Of course I knew what it was..
